The Full Story

Everdale began not as a business idea, but as a belief — that food can be both indulgent and responsible, delicious and compassionate.

In a small Melbourne kitchen, founders Henry and Jullian Ponco set out on a mission to reinvent the way people experience plant-based food. What started as weekend experiments — grinding, mixing, and tasting — quickly turned into a vision to prove that vegan food isn’t just an alternative… it’s the future.

While most restaurants treat vegan dishes as an afterthought — a token option at the end of the menu — Everdale lives and breathes plant-based innovation. Every burger, every scoop of gelato, every ingredient is crafted to challenge expectations.

Our burgers are bold, satisfying, and entirely meat-free — crafted with creativity and balance, not compromise. From crispy oyster mushroom patties to our signature mac & cheese burger, each creation is designed to redefine what comfort food can be.

Traditional gelato is known for its richness, but it often comes with added sugars, cholesterol, and guilt. At Everdale, we wanted to change that.
